Stuffing is one of my all time favourite things to eat when there is a turkey on the table! I love anything with poultry-type seasonings like thyme and sage! You can make stuffing with gluten free bread which can be delicious…but slightly expensive at $7 for a tiny loaf.
I found this fun recipe in one of my favourite cookbooks Simply in Season. I like that it uses naturally gluten free whole foods and I didn’t change anything in the recipe! I’ll have to make it again….maybe even for Christmas dinner!
Ingredients (Can easily be double to feed a crowd):
1 cup brown rice
2 1/3 cups apple juice
1-2 tbsp butter/earth balance
1/2 large onion, diced
1 stalk celery, diced
2 large unpeeled green apples, diced
1/2 cup walnuts or pecans (or sunflower/pumpkin seeds or raisin/dried apricots)
1/4 cup brown sugar
1 tbsp dried herbs of choice thyme, sage, basil, oregano
1/2 tsp poultry seasoning
Salt and pepper to taste
Directions:
1. Cook rice in apple juice until tender. Set aside.
2. Melt butter or Earth Balance in a pan. Saute onion and celery until soft.
3. Add rice, cooked vegetables, apples and remaining ingredients into a casserole dish, cover. Bake at 350F for 45 minutes. Alternatively can be used as stuffing in poultry.
