Bircher Muesli (Overnight oatmeal)

Happy Nutrition Month everyone!!!  In honour of the blessed month Dietitians of Canada has released a super cool app called Cookspiration http://cookspiration.com/home.aspx.  They have an apple app and android is coming still.  It’s fabulous – check it out!  I found this recipe on it and I made it last night for breakfast this morning.  And is it ever good.  In my true fashion I didn’t make it like the recipe and tweeked it here and there to suit my taste 😉

Ingredients:

2/3 cup quick-cooking rolled oats (use Gluten free oats if needed)

2 tbsp each ground flaxseed, chia seeds, unsweetened coconut

2 cups 1% milk (soy or almond beverage)

1/4 cup brown sugar

1/4 tsp cinnamon

1 1/2 cups lower-fat plain yogurt

1 1/2 tsp lemon juice

1/2 cup frozen blueberries

Fresh fruit for the morning – sliced strawberries, bananas, canned peaches, pears, oranges, etc….

Directions:

1. In a bowl, stir oats, seeds, coconut into milk; let stand for 15 minutes. Stir in sugar and cinnamon.

2. Add yogurt, lemon juice, fruit; stir all together. Refrigerate overnight.

3. At serving time, slice fruit and stir into mixture.

Perfect for quick mornings! 🙂
