Merry Christmas! I was tasked with bringing a salad to Christmas Dinner this year. Seriously? Why does the dietitian always get tasked with the salad? But I was happy for that actually because I knew there would be some fresh veggies on the table at least 😉 In the spirit of the season I picked vegetables that were red or green! It was crisp and delicious and complimented the other heavy meal items well!
Broccoli florets (they can be slightly cooked for 1 minute in the microwave to take the bitter edge off if necessary)
1. Wash and chop vegetables.
2. Artfully display your vegetables in a nice serving bowl.
3. Convince your family members to eat salad at Christmas dinner….or at least along with the leftovers the following day.
