Is there anything better than date squares? I seriously doubt it.
At least by my taste preference!
This dessert is always made at Christmas time in my family home. It’s always been one of my favourite dainties and I have even requested it as my birthday cake in the past!
In terms of nutrition it is a treat due to the sugar. I try not to mess with the ingredients in desserts too much as I feel – if something is meant to be a treat then let it be and enjoy it in its full potential! At least this recipe is made with dates and oats, two healthy ingredients!
1 ½ cup rolled oats
1 ½ cups gluten free flour blend
¼ tsp salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup margarine or butter, softened
¾ pound pitted dates, diced
1 cup water
1/3 cup packed brown sugar
1 teaspoon lemon juice
- Preheat oven to 350 F.
- In a large bowl, combine oats, flour, salt, 1 cup brown sugar, baking soda. Cut in butter until crumbly. Press half of mixture into the bottom of a 9×9 inch cake pan.
- In a pot over medium heat combine dates, water and 1/3 cup brown sugar. Bring to a boil and cook until thickened and soft. Stir in lemon juice and remove from heat.
- Spread date mixture over bottom crust. Pat remaining crumbs on top.
- Bake in the oven for 20-25 minutes in preheated oven, or until top is lightly toasted. Cool, slice and serve.
