Delicious Date Squares

Is there anything better than date squares?  I seriously doubt it.

At least by my taste preference!

This dessert is always made at Christmas time in my family home.  It’s always been one of my favourite dainties and I have even requested it as my birthday cake in the past!

In terms of nutrition it is a treat due to the sugar.  I try not to mess with the ingredients in desserts too much as I feel – if something is meant to be a treat then let it be and enjoy it in its full potential!   At least this recipe is made with dates and oats, two healthy ingredients!

1 ½ cup rolled oats

1 ½ cups gluten free flour blend

¼ tsp salt

¾ teaspoon baking soda

1 cup packed brown sugar

¾ cup margarine or butter, softened

¾ pound pitted dates, diced

1 cup water

1/3 cup packed brown sugar

1 teaspoon lemon juice

  1. Preheat oven to 350 F.
  2. In a large bowl, combine oats, flour, salt, 1 cup brown sugar, baking soda.  Cut in butter until crumbly.  Press half of mixture into the bottom of a 9×9 inch cake pan.
  3. In a pot over medium heat combine dates, water and 1/3 cup brown sugar.  Bring to a boil and cook until thickened and soft.  Stir in lemon juice and remove from heat.
  4. Spread date mixture over bottom crust.  Pat remaining crumbs on top.
  5. Bake in the oven for 20-25 minutes in preheated oven, or until top is lightly toasted.  Cool, slice and serve.
