I had mashed pumpkin left over from my adventures cooking the pumpkin last week and had a sweet tooth after supper tonight. The result? Pumpkin pie ice cream!!
Vanilla ice cream
Cinnamon or pumpkin pie spice
1. Let vanilla ice cream thaw slightly.
2. Mix in pureed pumpkin, a sprinkle of cinnamon. (Use a few spoon fulls of pumpkin for about a cup of ice cream – but adjust to your taste).
3. Mix together and serve! Delicious!!
