Mashed Cauliflower

Want a way to sneak in more vegetables?  Like mashed potatoes?  This recipe is for you!

Take a regular head of cauliflower, mash it up and you have a mashed potato substitute that’s lower in calories!  It’s pretty impressive how close to potatoes it actually taste.


Cauliflower – 1 head, chopped

2 tbsp milk

2 tbsp of cream cheese or 1 tbsp margarine

Garlic powder (optional)


1. Steam cauliflower on the stove until tender.

2. Heat milk and cream cheese or margarine in the microwave until hot.

3. Drain water from cauliflower.  Mix with milk and cream cheese. Puree with food processor or blender.

4. Season with a little garlic powder, curry powder or however you would mashed potatoes!
