Don’t get freaked out with the kale in the title! Kale like already mentioned by Tabitha is a super vegetable. The frilly vegetable is really high in vitamins thanks to it’s deep green colour and is great for your body! A neat little way of sneaking it into your diet is to blend it up in your morning or snack smoothie! Trust me it doesn’t taste like greens, there are other fruits in there with stong flavours that cover it up. Pair it with high anti-oxidant blueberries, some protein rich peanut butter, fibre packed flax and you have have a powerful start to your morning! Note: Blend up very well or you might have bits of un-blended kale…not pleasant…..
Purple Power Kale Smoothie
1 leaf of kale, washed well and tough inner stem removed
(Tip: An easy way to de-rib it is to hold the base of the stem and run your hand along it towards the top. The leaf part will slide right off)
1 cup of vanilla soy milk or almond milk or regular milk + 1 tsp honey or yogurt….you get the idea
1 cup of blueberries or other berries, slightly thawed or fresh
1-2 tbsp ground flaxseed
1 tbsp natural peanut butter, almond butter, pumpkin seed butter…..
Add ingredients into blender and process until smooth.
Serves two or one very hungry person. I like to drink this with a piece of toast in the morning and take the leftovers for a snack at work.
