Well it’s dialysis recipe development time again and this month I am choosing to make a pasta recipe using ingredients that fit within the guidelines. That means no tomatoes, no milk, no cream, no hard cheese. However cream cheese is appropriate so I developed this simple and easy recipe inspired by a couple pasta recipes from the Philadelphia website.
I use Light Cream Cheese which is made with 38% less fat than regular and each serving only contains 6g of fat from the cream cheese itself but man oh man is it ever tasty. Don’t like shrimp? Use chicken instead! Saute chicken in pan before adding vegetables and ensure cooked all the way through before serving.
Creamy 15 Minute Alfredo
Gluten free pasta of your choice
2 tsp olive oil
1/2 onion, chopped
2 – 3 cups broccoli, chopped
2 cups thawed, peeled, de-veined shrimp
1/2 block of light cream cheese
1 tsp garlic powder
1. Heat large pot of water, lightly salted. Cook pasta according to package direction.
2. Heat oil in frying pan, add onion, broccoli and shrimp. Heat for about 10 minutes on medium heat until tender and heated through.
3. Add 1/2 block of cream cheese, cubed. Mix continuously until melted.
4. Serve on top of pasta with a side salad.
