Hearty Vegetarian Chef Salad

Well yesterday at my house the power was out for over an hour right around supper time – so it was a no cooking day for me!  Instead I whipped up a delicious vegetarian version of the Chef’s Salad.  Normally it contains turkey and ham but I swapped out the meat and replaced it with old aged lower fat cheese, canned chick peas and hard boiled eggs which I had made the day before. This version is lower in fat, sodium, higher in fibre, is better for the environment and is more moist than the original. My husband thought it was fantastic and even made himself a second plate after devouring his first helping!

Vegetarian Chef Salad


2-4 cups romaine lettuce – washed and chopped

2-4 cups spinach – chopped or leave whole

1 tomato – diced

1/2 cucumber – diced (leave on peel for more nutrients)

1 cup chick peas, drained and rinsed

1/2 cup aged cheddar low fat cheese

2-3 hard boiled eggs, chopped

Dressing of your choice


Put half of each ingredient on plate.  Drizzle with dressing and enjoy!

Serves 2.

Add a glass of milk and a small piece of toast to complete the meal!
