Simple Avocado Pasta


I found this unique recipe on the Oh She Glows blog which I have found quite the inspiration!  Check it out!

The perk of this recipe is that it makes a rich and creamy sauce with simple ingredients (only 7 in fact and most of them are spices/herbs!).  It is just as fast as using a store bought pasta sauce.  This creamy pasta is vegan/dairy free.

Move over Kraft Dinner!

This takes a similar amount of time to make and is far more wholesome, nutritious and satisfying!  Try it out for yourself.

Avocados are rare nutritionally as they are a fruit that actually has FAT in it!  Concerned?  Well the fat is “mono-unsaturated” which is heart healthy and a major component in the so called “Mediterranean Diet”.

Compared with the other ingredients you usually replace it with – it’s not really a big deal in terms of calories and fat unless you are really over-doing it!  Avocados are a source of vitamin E, potassium, fiber and heart healthy fat.

On a side note – if you have dry skin applying mashed avocado on your skin for a facial will stimulate your skin’s oil production and gives you soft, hydrated skin!  Not for oily skin though….

 Serve with a simple salad and there you have it, a simple wholesome meal in 15 minutes.

Ingredients (Serves two):

Cook enough gluten free pasta for two large servings

1 large ripe Avocado, pitted and peel removed

1 tablespoon fresh lemon juice

1 clove garlic, minced

1/4 cup chopped fresh basil

Dash salt

Fresh ground black pepper to taste


1. Bring water to a boil in a medium sized pot. Salt the water and add in your pasta, reduce heat to medium, and cook until tender.

2. While the pasta is cooking, make the sauce by placing the avocado, garlic, lemon juice, herbs, salt and pepper into a food processor or use an immersion blender. Process until smooth and creamy.  Tip: No food processor?  Mash avocado with a fork and use jarred pureed garlic.

3. When pasta is done cooking, drain and place pasta into a large bowl. Add the sauce to the pasta and toss until pasta is well coated. Season with additional salt, pepper and Parmesan cheese if desired. Serve immediately.

Note: This pasta dish is best eaten the day it is made.
