I found this simple little recipe idea thanks to one of my favourite recipe books – Simply in Season which offers fantastic recipes divided into the four seasons and emphasizing seasonal ingredients! Since broccoli is on sale at my local grocery store….because it’s in season…. : ) This recipe was particularly tasty with a nice dense piece of homemade gluten free bread and old aged cheddar cheese.
2 cups chopped broccoli
1/2 cup chopped onion
2 tsp canola oil
A few dashes of basil, cayenne, salt and pepper
4 Slices of gluten free bread
4 tsp margarine
Grated old cheddar cheese
1. Chop vegetables and saute canola oil in pan until broccoli is bright green. Add spices and mix in.
2. Toast bread and butter. Top with broccoli mixture, shredded cheese.
3. Heat sandwich in a toaster oven or under a broiler until cheese melts.
Serve immediately. Enjoy this simply delightful sandwich!
